Strawberry Basil Compote

Ripe strawberries simmered with fresh basil and just enough sweetness to lift the fruit without masking it. Basil adds a soft freshness that keeps the compote vibrant, balanced, and full of character.
FORAGE BAKER'S NOTES
This compote is intentionally less sweet than traditional jams and preserves, allowing the natural flavor of the fruit to shine. For a brighter finish, stir in ½ teaspoon lemon zest after removing from the heat. For deeper warmth, add ½ teaspoon molasses during simmering.
Sweeteners Matter Too. Sweeteners significantly affect flavor balance and texture. For best results, we recommend Homestead Sweetener or traditional sugar.
- Homestead Sweetener: 140g per cup (1:1 sugar replacement by volume)
- Granulated Sugar: 200g per cup
- Substitutions may affect sweetness, consistency, and reduction.
INGREDIENTS
- 3 cups fresh strawberries, hulled and halved
- ¼–⅓ cup Homestead Sweetener
- 1½ tablespoons fresh lemon juice
- 3–4 small fresh basil leaves, lightly torn
- Pinch fine sea salt
Optional for a Thicker Texture
1 teaspoon Heritage Baker's Flour whisked with 1 teaspoon water

INSTRUCTIONS
Warm the Fruit
Combine the strawberries, Homestead Sweetener, lemon juice, and sea salt in a saucepan over medium heat.
Simmer Gently
Cook for 8–12 minutes, stirring occasionally, until the strawberries soften and release their juices.
Add the Basil
Stir in the basil during the final 2–3 minutes of cooking.
Adjust the Texture
Lightly mash the fruit for a jam-style compote or leave it rustic with larger fruit pieces.
Cool
Allow the compote to cool. It will continue to thicken as it rests.
