Blackberry & Thyme Jam

Whole blackberries simmered slowly with fresh thyme and Homestead Sweetener—just enough to soften the fruit and draw out its natural depth. Bright, balanced, and quietly complex.
FORAGE BAKER'S NOTES
Keep the thyme subtle. It should round the berry flavor rather than dominate it.
For a brighter finish, stir in ½ teaspoon lemon zest after removing the jam from the heat.
For deeper warmth, add ½ teaspoon molasses during simmering.
Sweeteners Matter Too. This recipe is intentionally less sweet than traditional jams, allowing the natural character of the berries to remain front and center.
- Homestead Sweetener: 140g per cup (1:1 sugar replacement by volume)
- Granulated Sugar: 200g per cup
- Substitutions may affect sweetness, reduction, and final texture.
INGREDIENTS
- 3 cups fresh or frozen blackberries
- ⅓ cup Homestead Sweetener
- 1½ tablespoons fresh lemon juice
- 1 small sprig fresh thyme
- Pinch fine sea salt
Optional for a Thicker Texture
1–2 teaspoons Heritage Baker's Flour whisked with 1 teaspoon water

Simmer longer for a naturally thickened jam
INSTRUCTIONS
Warm the Fruit
In a heavy saucepan over medium heat, combine the blackberries, Homestead Sweetener, lemon juice, and sea salt.
Infuse Gently
Add the thyme sprig.
Simmer for 12–18 minutes, stirring occasionally, until the berries soften and the juices begin to reduce.
Adjust the Texture
Lightly mash for a more traditional jam texture or leave some berries whole for a rustic finish.
Remove the thyme sprig.
Cool & Thicken
Allow the jam to cool completely.
It will continue to thicken as it rests.
