Wild Berry Cobbler



A simple, nostalgic cobbler for whatever fruit is in season. Juicy fruit, a tender lightly sweet topping, and a hot oven do all the work. Meant to be served warm and shared.

FORAGE BAKER'S NOTES

Flour Matters. Gluten-free flour blends—and even traditional wheat flours—can vary widely in weight per cup, which is why we recommend using a kitchen scale whenever possible.

If measuring by volume, gently scoop Heritage Baker's Flour into a measuring cup and level with a knife. This yields approximately 125g per cup. Packing the cup can result in excess flour and a denser cobbler, while spooning may under-measure.

Sweeteners Matter Too. Sweeteners significantly affect moisture and texture. For best results, we recommend Homestead Sweetener or traditional sugar.

  • Homestead Sweetener: 140g per cup (1:1 sugar replacement by volume)
  • Granulated Sugar: 200g per cup
  • Substitutions may affect moisture, browning, and overall texture.

INGREDIENTS

  • 2–3 pounds fruit of choice (berries, stone fruit, apples, or a combination)
  • 1⅓ cups (162g) Heritage Baker's Flour
  • ½ cup (70g) Homestead Sweetener
  • 2 teaspoons baking powder
  • 1 stick (112g) unsalted butter, melted
  • ⅔ cup (153g) milk
  • 1 large egg (50g)
  • 1–2 teaspoons vanilla extract (optional)

INSTRUCTIONS

  • Preheat oven to 350°F (175°C). Butter a 9 x 13 inch baking dish and fill evenly with fruit.
  • In a medium bowl, whisk together Heritage Baker's Flour, baking powder, and Homestead Sweetener.
  • In a separate bowl, whisk together melted butter, milk, egg, and vanilla extract.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Spoon the batter evenly over the fruit.
  • Bake for 26–30 minutes, or until golden brown and bubbling around the edges.
  • Allow to cool slightly before serving.
