Apple Orchard Fritters

Heritage-style apple fritters filled with caramelized orchard apples and finished with a light homestead glaze. Crisp on the outside, tender within, and rich with warm cinnamon flavor.
FORAGE BAKER'S NOTES
Flour Matters. Gluten-free flour blends—and even traditional wheat flours—can vary widely in weight per cup, which is why we always recommend using a kitchen scale whenever possible.
If measuring by volume, gently scoop Heritage Baker's Flour into a measuring cup and level with a knife. This yields approximately 125g per cup. Packing the cup can result in excess flour and a denser fritter, while spooning may under-measure.
Sweeteners Matter Too. Sweeteners significantly affect texture, moisture, and browning. For best results, we recommend Homestead Sweetener or traditional sugar.
- Homestead Sweetener: 140g per cup (1:1 sugar replacement by volume)

- Substitutions may affect texture, caramelization, and overall structure.
WORKING THE BATTER
Allow the cooked apples to cool completely before folding them into the batter.
Removing excess moisture helps prevent dense fritters and promotes a crisp exterior.
The batter should be thick but scoopable. If it becomes too loose, add a small amount of additional flour.
Maintain a consistent oil temperature throughout frying for even browning and a tender interior.
APPLE FILLING
2 medium Honeycrisp or Pink Lady apples, small dice
1 tablespoon grass-fed butter
2 tablespoons Homestead Sweetener
½ teaspoon cinnamon
Pinch mineral salt
½ teaspoon fresh lemon juice
FRITTER BATTER
2 cups Heritage Baker's Flour (250g)
¼ cup Homestead Sweetener
2 teaspoons baking powder
½ teaspoon mineral salt
½ teaspoon cinnamon
2 pasture-raised eggs
¾ cup whole milk
1 teaspoon vanilla extract
1 tablespoon melted butter
FOR FRYING
Tallow or avocado oil
HOMESTEAD CRACKLE GLAZE
1 cup powdered Homestead Sweetener
2–3 tablespoons whole milk
½ teaspoon vanilla extract
INSTRUCTIONS
Prepare the Apples
- In a skillet over medium heat, melt the butter.
- Add the apples, Homestead Sweetener, cinnamon, salt, and lemon juice.
- Sauté for 5–7 minutes until slightly softened but not mushy.
- Spread the apples onto parchment paper and allow them to cool completely.
- Lightly blot any excess moisture.
Make the Batter
- In a large bowl, whisk together Heritage Baker's Flour, Homestead Sweetener, baking powder, salt, and cinnamon.
- In a separate bowl, whisk together the eggs, milk, vanilla extract, and melted butter.
- Add the wet ingredients to the dry ingredients and stir gently until just combined.
- Fold in the cooled apples.
- The batter should be thick but scoopable.
Fry
- Heat oil to 350°F.
- Drop approximately ¼ cup portions of batter into the hot oil, flattening slightly with the spoon.
- Fry for 2–3 minutes per side, until deeply golden brown.
- Transfer to a wire rack.
Glaze
- Whisk together the glaze ingredients until smooth and pourable.
- Dip the warm fritters into the glaze and return them to the rack.
- Allow 10–15 minutes for the glaze to set and develop a delicate crackle finish.
