Vegan Bread Dough



A simple, egg-free dough designed for shaping into rolls, buns, or rustic loaves. Light in texture and structured for everyday baking, it adapts easily to both sweet and savory finishes.

FORAGE BAKER'S NOTES

Flour Matters. Gluten-free flours—and even traditional wheat flours—can vary widely in weight per cup, which is why we recommend using a kitchen scale whenever possible.

If measuring by volume, gently scoop Artisan Bread Flour into a measuring cup and level with a knife. This yields approximately 125g per cup. Packing the cup can result in excess flour, while spooning may under-measure.

WORKING THE DOUGH

This dough is intentionally simple and relies on hydration and brief kneading for structure. Allowing the dough to rest before shaping improves texture and makes handling easier. Use damp hands when shaping rolls, buns, or loaves for a smoother finish.

This dough works equally well for savory breads, sandwich buns, dinner rolls, or lightly sweetened loaves.

INGREDIENTS

  • Makes 8 rolls, 4 burger buns, or 1 small loaf
  • 2¼ cups (280g) Artisan Bread Flour
  • 2 teaspoons baking powder (optional)
  • 1½ cups (360g) water

INSTRUCTIONS

  1. Preheat oven to 375°F. Line a sheet pan with parchment paper.
  2. In a large bowl, combine Artisan Bread Flour and baking powder, if using.
  3. Add the water and mix until fully combined.
  4. Allow the dough to rest for 15 minutes.
  5. Knead gently for approximately 60 seconds until the dough begins to tighten.
  6. Divide into desired portions and shape with damp hands.
  7. Place on the prepared sheet pan.

BAKE TIMES

  • Dinner Rolls: 28–30 minutes
  • Burger Buns: 32–34 minutes
  • Rustic Loaf: 50–54 minutes
  • Bake until fully set and golden.
  • If browning too quickly, tent loosely with parchment paper.

LOAF NOTES

  • Store in plastic for a softer crust.
  • Store in paper for a drier crust.
  • To restore crispness, bake at 400°F for 8–10 minutes.
  • Refrigerate for 7–10 days or freeze for up to 1 year.
