Rich, silky, and ready in minutes, this versatile blender gravy comes together with just a handful of pantry ingredients. Perfect for roasted meats, mashed potatoes, vegetables, and holiday meals, it's an easy way to bring homemade comfort to the table.
FORAGE BAKER'S NOTES
Flour Matters. Gluten-free flour blends can vary considerably in weight per cup, which is why we always recommend baking by weight whenever possible.
If measuring by volume, gently scoop Rustic Bread Flour into a measuring cup and level with a knife. This yields approximately 125g per cup. Packing the cup can result in excess flour and a thicker gravy than intended.
Customize the Flavor. The broth you choose will determine both the flavor and color of your gravy. Chicken, beef, vegetable, or bone broth all work beautifully. Fresh herbs, roasted garlic, or sautéed vegetables add even more depth.
GRAVY
Makes approximately 2½ cups
Ingredients
- 2 cups chicken, beef, vegetable, or bone broth
- 4 tablespoons Rustic Bread Flour
- Salt and freshly ground black pepper, to taste
- Fresh or dried sage, thyme, garlic, or your favorite herbs
Optional
- 1 cup cooked carrots, celery, or onion
- 2 tablespoons butter
INSTRUCTIONS
- Add the broth and Rustic Bread Flour to a blender.
- Blend on high for 30 seconds, or until completely smooth.
- If using cooked vegetables, add them to the blender and blend until silky.
- Pour the mixture into a small saucepan over medium heat.
- Stir continuously until the gravy begins to simmer and thickens to your desired consistency.
- Stir in the butter, if using.
- Season with salt, pepper, and herbs to taste.
- Serve immediately.
FORAGE TIP
If the gravy becomes thicker then you'd like, simply whisk in additional warm broth until it reaches your preferred consistency. Leftover gravy can be refrigerated and gently reheated over low heat while whisking until smooth.
