Graham Crackers
These old-fashioned grain-free graham crackers bake up crisp, golden, and lightly sweet with a satisfying snap. Whether made with honey or finished with cinnamon, they're perfect for afternoon coffee, layered desserts, homemade crusts, or simply enjoyed straight from the cookie jar.
FORAGE BAKER'S NOTES
Flour matters. Gluten-free flour blends—and even traditional wheat flours—can vary widely in weight per cup, which is why we recommend using a kitchen scale whenever possible.
If measuring by volume, gently scoop Heritage Baker's Flour into a measuring cup and level with a knife. This yields approximately 125g per cup. Packing the cup can result in excess flour and a denser cracker, while spooning may under-measure.
Sweeteners matter too. Sweeteners significantly affect texture and crispness. For best results, we recommend Homestead Sweetener or traditional sugar.
- Homestead Sweetener: 140g per cup (1:1 sugar replacement by volume)
- Granulated Sugar: 200g per cup
WORKING THE DOUGH
Graham crackers continue to crisp as they cool. Allow them to cool completely before judging texture. Rolling the dough thin is essential for achieving a classic snap. Scoring before the final bake creates clean, breakable crackers.
HONEY GRAHAM CRACKERS
INGREDIENTS
- 1½ cups (187g) Heritage Baker's Flour
- 6 tablespoons (85g) cold butter, cut into pieces
- ⅓ cup (47g) Homestead Sweetener
- 1 egg white (30g)
- ¼ cup (60g) honey
DIRECTIONS
- Prepare the dough in a food processor or mixing bowl and chill until firm.
- Roll half of the dough on a silicone mat into a thin layer.
- Preheat oven to 300°F.
- Bake for 10 minutes. Remove from the oven and score using a cracker roller, pizza wheel, or fork.
- Return to the oven and bake for 15–20 minutes more, checking every 5 minutes, until golden and crisp.
- Cool completely before breaking into crackers.
CINNAMON GRAHAM CRACKERS
INGREDIENTS
- 1½ cups (187g) Heritage Baker's Flour
- 6 tablespoons (85g) cold butter, cut into pieces
- ⅓ cup plus 2 tablespoons (70g) Homestead Sweetener
- 1 egg white (30g)
- 2 teaspoons (10g) ice water
- Topping: Cinnamon mixed with additional sweetener
DIRECTIONS
- Prepare the dough in a food processor or mixing bowl and chill until firm.
- Roll half of the dough on a silicone mat into a thin layer.
- Sprinkle evenly with cinnamon sweetener topping.
- Preheat oven to 300°F.
- Bake for 10 minutes. Remove from the oven and score.
- Return to the oven and bake for 15–20 minutes more, checking every 5 minutes, until golden and crisp.
- Cool completely before breaking into crackers.
