FORAGE BAKER'S NOTES
Flour Matters. Gluten-free flours—and even traditional wheat flours—can vary widely in weight per cup, which is why we recommend using a kitchen scale whenever possible.
If measuring by volume, gently scoop Heritage Baker's Flour into a measuring cup and level with a knife. This yields approximately 125g per cup. Packing the cup can result in excess flour and a denser waffle, while spooning may under-measure.
WORKING THE BATTER
This batter relies on egg whites for structure and crispness rather than added sugar. Mix only until smooth, then cook until the steam subsides. This is a reliable sign that the waffle has fully set and crisped. These waffles are designed to hold their texture well and reheat beautifully in the oven or toaster.
WAFFLE VARIATIONS
Classic Vanilla: Add 1 teaspoon vanilla extract.
Cinnamon Sugar: Add ½ teaspoon ground cinnamon and 1–2 tablespoons Homestead Sweetener.
Blueberry: Fold in ½–¾ cup fresh or frozen blueberries.
Chocolate Chip: Add ⅓–½ cup chocolate chips.
Lemon: Add 1 teaspoon lemon zest and a splash of lemon juice.
Savory Herb: Fold in chopped thyme, rosemary, or chives and a pinch of sea salt.
Cheese & Pepper: Add ½ cup finely shredded cheese and freshly cracked black pepper.
INGREDIENTS
- Makes approximately 4–6 (4-inch) waffles
- 2 cups (250g) Heritage Baker's Flour
- 1 teaspoon baking powder (optional, for extra lift)
- ¾ cup plus 2 tablespoons (200g) egg whites
- 1 cup (240g) milk
- 2 tablespoons neutral oil or melted butter
INSTRUCTIONS
- Preheat the waffle maker according to the manufacturer's instructions and lightly grease if needed.
- In a medium bowl, whisk together Heritage Baker's Flour and baking powder, if using.
- Add the egg whites, milk, and oil or butter. Whisk until smooth.
- Pour the batter into the prepared waffle maker.
- Cook until the steam stops rising or the waffles are deeply golden and crisp.
- Serve immediately or cool and reheat as desired.
