Soft Pizza Rolls

Soft, golden, and filled with bubbling cheese and your favorite pizza toppings, these homemade pizza rolls are everything you love about pizza wrapped into one comforting bite. Perfect for family dinners, game days, lunchboxes, or sharing fresh from the oven.
FORAGE BAKER'S NOTES
Flour Matters. Gluten-free flour blends can vary considerably in weight per cup, which is why we always recommend baking by weight whenever possible.
If measuring by volume, gently scoop Rustic Bread Flour into a measuring cup and level with a knife. This yields approximately 125g per cup. Packing the cup can result in excess flour and a denser dough.
Working the Dough. Allow the dough to rest for 15 minutes before shaping. This gives the flour time to fully hydrate and creates a smoother, more workable dough. Because the dough remains soft and slightly sticky, lightly damp hands and parchment or plastic wrap make shaping much easier.
DOUGH
Makes 9 large pizza rolls
Dry Ingredients
- 1¼ cups (156g) Rustic Bread Flour
- 2 teaspoons baking powder (or ¼ teaspoon baking soda)
- Garlic powder and/or Italian seasoning (optional)
Wet Ingredients
- 4 egg whites (120g)
- ½ cup (120g) milk
- 2 teaspoons apple cider vinegar
FILLING
- ¼ cup (60g) softened butter or pizza sauce
- Garlic powder and/or Italian seasoning, to taste
- ¼ cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- Sliced pepperoni (optional)
- Chopped black olives, mushrooms, bell peppers, or onions (optional)
INSTRUCTIONS
- Preheat the oven to 375°F. Butter an 8–9 inch square or round baking dish, or use a parchment-lined sheet pan.
- In a medium bowl, whisk together the milk and apple cider vinegar. Add the egg whites and whisk until smooth.
- Add Rustic Bread Flour, baking powder, and optional seasonings. Stir until fully combined, then allow the dough to rest for 15 minutes.
- Using a spatula, gently fold and press the dough several times until it becomes slightly firmer.
- Transfer the dough onto a sheet of plastic wrap or parchment paper. With damp hands, gently shape it into a log, then flatten into a rectangle approximately 7 × 13 inches.
- Spread evenly with softened butter or pizza sauce.
- Sprinkle with Parmesan, mozzarella, and your desired toppings.
- Starting with the long edge, gently roll the dough into a log using the plastic wrap or parchment to help lift and guide it.
- Slice into 9 equal rolls and arrange in the prepared baking dish.
- Bake for 30–35 minutes, or until golden brown and fully baked through. Metal pans may bake slightly faster.
- Allow the rolls to cool for 5–10 minutes before serving.
FORAGE TIP
For smaller, appetizer-sized pizza rolls, divide the dough in half before rolling. Shape two smaller logs, slice into mini rolls, and reduce the baking time slightly until golden.
