Classic Pizza Crust

Crisp around the edges with a tender, satisfying bite, this versatile pizza crust is the perfect foundation for everything from traditional Margherita pizzas to fully loaded family favorites. Bake it thin and crisp or shape a thicker edge for a classic pizzeria-style crust.
FORAGE BAKER'S NOTES
Flour Matters. Gluten-free flour blends can vary considerably in weight per cup, which is why we always recommend baking by weight whenever possible.
If measuring by volume, gently scoop Rustic Bread Flour into a measuring cup and level with a knife. This yields approximately 125g per cup. Packing the cup can result in excess flour and a denser dough.
Working the Dough. Allow the dough to rest for 10 minutes before shaping so the flour has time to fully hydrate. The dough will remain soft and slightly sticky, so lightly damp hands make shaping much easier.
Customize Your Crust. Shape the dough into a thin crust for a crisp finish, or gently curl the edges to create a thicker artisan-style rim.
DOUGH
Makes one 12–14 inch pizza
Ingredients
- 1¼ cups (156g) Rustic Bread Flour
- 1 cup (240g) egg whites (water may be substituted, though egg whites provide the best texture and structure)
- Melted butter or olive oil, for greasing the pan
INSTRUCTIONS
- Preheat the oven to 400°F. Lightly grease a pizza pan or baking sheet with melted butter or olive oil.
- In a medium bowl, combine Rustic Bread Flour and the egg whites. Mix until fully incorporated.
- Allow the dough to rest for 10 minutes.
- Using a spatula, gently fold and press the dough several times until it becomes smooth and cohesive.
- Transfer the dough onto parchment paper or a lightly greased surface.
- With damp hands, gently press or roll the dough into a 12–14 inch circle. For a thicker crust, slightly curl and build up the outer edge.
- Transfer the dough to the prepared pan if shaping on parchment.
- For a crisp crust: Bake for 18–20 minutes before adding toppings.
- Add your favorite sauce, cheese, and toppings.
- Return to the oven and bake until the cheese is melted, the sauce is bubbling, and the crust is beautifully golden.
FORAGE TIP
For the crispiest crust, pre-bake before adding toppings. If using fresh vegetables with a high water content, lightly sauté or pat them dry before baking to prevent excess moisture.
