FORAGE BAKER'S NOTES
This frosting is intentionally balanced rather than aggressively sweet, designed to complement rather than overpower.
For a sweeter frosting, increase the Homestead Sweetener to a full 1 cup.
Always begin with fully softened cream cheese and butter for the smoothest texture.
For the lightest texture, beat until fluffy before adding sweetener.
INGREDIENTS
- 8 ounces full-fat cream cheese, softened
- ½ cup unsalted butter, softened
- ¾–1 cup Homestead Sweetener, sifted
- 1 teaspoon pure vanilla extract
- Pinch fine sea salt
INSTRUCTIONS
Beat the Base
In a stand mixer fitted with the paddle attachment, or using a hand mixer, beat the cream cheese and butter together until completely smooth and fluffy, about 2–3 minutes.
Add the Sweetener
- Add the sifted Homestead Sweetener ¼ cup at a time, mixing on low speed at first and increasing to medium speed until fully incorporated.
- Continue beating until light and airy.
Finish
- Add the vanilla extract and sea salt.
- Beat for another 30–60 seconds until silky smooth.
ADJUST THE TEXTURE
For a thicker frosting suitable for piping, chill for 15–20 minutes before use. For a softer spreading consistency, reduce the sweetener slightly.
